Much of modern nutrition has been built around one-size-fits-all guidance, even though our responses to food are deeply individual. Professor Tim Spector has spent more than three decades exploring why the same food can affect two people so differently, and what those differences reveal about the relationship between food, the gut and long-term health. A medically qualified epidemiologist, he founded the TwinsUK registry in 1992 and now leads research into the gut microbiome, metabolic responses and personalised nutrition at King’s College London and ZOE. His work includes the PREDICT programme and the community-science COVID Symptom Study, for which he received an OBE. Across more than 900 scientific papers and books including Food for Life and Ferment, Tim makes a complex but hopeful case: better health may begin not with another rigid rule, but with greater diversity, closer attention and a more curious relationship with food.
